RBR Tailgating: Greek Chicken
In trying to keep with the theme of our opponent, we're going with some Greek flavor this week:
Grilled Greek Chicken Sandwiches
6 boneless, skinless chicken breasts
a couple of large tomatoes
feta cheese
Greek SeasoningMarinade:
1/2 cup olive oil
3 cloves garlic, chopped
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh oregano
Juice of 2 lemonsIn a glass dish, mix the olive oil, garlic, rosemary, thyme, oregano, and lemon juice. Place the chicken in the mixture, cover, and marinate in the refrigerator for at least 4 hours (overnight is always better).
Preheat grill for high heat.
Lightly oil the grill grate. Place chicken on the grill, and discard the marinade. Cook chicken pieces up to 15 minutes per side, until juices run clear.
When just about done, cover each breast with a slice of tomato, sprinkle the tomatoes with greek seasoning (you can use a store bought like Cavender's, or make your own), and then cover with the feta cheese. Once the tomatoes are cooked through, slap 'em on a bun and enjoy.

i’’ve done versions of this before but i want to try their approach. then, next time, i’ll figure out the approach i prefer.

Man, that sounds good!
My buddies and I usually stick with the basic burgers marinated in some dale’s, with doritos for a side. However, I may have to venture out of the “easy” and try some of these recipes that I’ve seen posted here. ROLL TIDE ROLL!!!

FIrst game tradition is
grilled Italian sausages on hoagie rolls, with grilled peppers and onions, so I’m sticking with that, but I might have to work something Greek in.
Wings and burgers.
Smoke wings at 225 for two hours then deep fry at 350 for one minute. Use a good spicy rub on chicken before smoking.
Burgers will be Juicy Lucy. IF you have never tried these you really need to. These have bcome a Alabama game day tradition for us. Link below.

Question for Todd:
won’t cooking boneless chicken breasts for 15 min. per side on high heat dry them out? I generally cook chicken breasts on med-high (on the higher side) for 15 min. total and they come out fine.

Yes, poultry should be cooked slow and low. Fatty red meat gets the high heat. Sometimes I'll slather some Q sauce on
breasts when they are almost done cooking and hit them with high heat to carmalize the sugar in the sauce but I usually cook chicken on low with a tin foil cap over the meat and the lid closed. You might turn the grill up high to get it hot but once the meat hits the grill I turn it down.
Never truss a big butt and a smile.
It depends, really...
…on just how hot your grill gets and how thick the breasts are. Use your best judgement since y’all know your grills better than I do.

…I put “up to 15 minutes” per side just to cover my bases. Again, use your best judgment as to the doneness.

None of that really covers the bases.
Take the guesswork out of cooking chicken (all meats for that matter) and get a meat thermometer.
Internal temp for done breasts should be 170 deg.F. Thighs, wings and legs should hit 180 deg F.
I will add that the chicken will be much more tender and cook more evenly if brought to near room temperature prior to hitting the grill.

Making sauce Dreamland style.
The Daughter turns 9 Monday; she’s been known to eat a slab on her own.
My 13 year old son
can eat 2 slabs. We have a BBQ place here called Memphis BBQ and also Lucille’s. It’s the closest thing to real BBQ out here. I am planning on ordering some Dreamland ribs for the Alabama-Auburn game this year (or maybe earlier) so he can try some really good BBQ ribs!

I have a similar recipe but mine calls for serving the leftover marinade in chilled high-ball glasses...
with a salted rim. Different strokes, I guess.

Smoking some wings. I marinate/glaze one set in BBQ Sauce, one in Honey Mustard, one with a spice rub, and one with lemon & pepper seasoning. Also do some 4 bean salad, and I dunno about the other side. Hopefully talk the girlfriend into making some slaw.
And of course, definitely got some Bama Bombs. Tried Vodka, Rum, Moonshine, etc. with them last year, but nothing’s better than some good bourbon. (and nothing is better than the leftover cherry flavored bourbon) One thing I did change up is I did some fresh cherries in addition to the maraschino’s out of the jar. They only nuisance is the pit to have to work around, but I’ll find out tomorrow.
There was a bar in B'ham
that I used to go to called Corey’s. It was off of Green Springs (next door to Sammy’s). Anyways, they used to serve all different kinds of wings like that. They were better to me than Wings, Buffalo Wild Wings or anywhere. And it was walking distance from my apartment, so I could get hammered and walk home if need be. I loved that place!

I applaud you. I try to stay in the middle of you and the poster above who doesn’t eat, as it interferes with the drinking. I keep it mostly simple, and cook as much in advance, as I’m guessing around 6PM tomorrow for the kickoff, I’ll be in poor shape to do much cooking.

Been doing it for 2 seasons and it hasn’t failed us yet. Teams like Tennessee, Kentucky & LSU are easy. Florida we have to get creative to find decent gator, but it can be done.
