This is only for special games, TN. SEC NC if we make, it and I cant get tickets. NC if we make it. It is delicious, but somewhat a pain to cook, it takes a whole hour. This soup is called Shrimp Bisque.
Get 1-1/2 lb of deviened shrimp with the shells on. Peel em and keep the shells, dice an onion, chop one carrot and chop one large celery stalk. Get a soup pot that can hold about 3 or 4 quarts. Put about 4 tablespoons of oil in the pot, Olive is best but any will do. Put it on medium and dump in the shells, cook them till they are good and pink, then move the pot off the heat, lift the shells out with a slotted spoon, keeping as much oil as you can, toss the shells and you have flavored oil. Kick the heat up, put the pan back on the heat, toss in the shrimp, stir em around a lot and cook them until they turn good and pink, about 3 or 4 minutes. Take the shrimp out and put them in a bowel, saving as much oil as possible. (Told you this was a pain)
Put the heat back to med maybe med low and toss in 1/4 cup butter, drop in the chopped carrot, celery and onion. Have a beer and slow cook and stir now and then till everything is soft and tender, you don't want to brown this.
Now add 2-1/2 cups of water, 1 cup of white wine, the less sweet the better, 1/4 cup of white rice, 1 bay leaf, 1 tablespoon salt, 1/4 to 1/2 teaspoon of cayenne pepper, 3 chicken bouillon cubes. Give it all a good stir, bring it to a full boil, then reduce to a simmer and cover till the rice is tender, about 15 minutes, maybe 17, you want that rice tender.
Open up a 16 oz can of tomatoes if you can find one, the recipe I use always asks for 16 oz. and I only can find 14 oz. Any how, drain them. Pull the pot off the stove, fish out the bay leaf and toss it. Dump in the tomatoes, put the shrimp back in the pot. Get out your blender and pour this soup into the blender in batches and blend it till it has no solids.
Pour everything back into the pot, add 2 cups of heavy cream, give a thorough stir and bring it back to just a bubble here and there boil. It is done.
It is really great with some crusty bread. It is thick and hearty, and it is all you need for game time.
Here are the ingredients for a shopping list: 1 carrot, 1 stalk celery, 1 large onion (I use sweet), 1-1/2 lb shrimp, vein out, shell on, Vegi oil, olive is best, 1 cup dry white wine, 1/4 cup white rice, 1 bay leaf, Salt, Cayenne pepper, 16 oz can of tomatoes in any shape, just don't mess up and get the "with garlic and whatever",3 chicken bullion cubes, 1/2 stick of butter and 16 oz of heavy cream. If you lack the skill set to make this, get your wife to give it a shot, you will come back for more.
Not recommended for people with Cholesterol problems.
