RBR Tailgating | Easy Mixed Berry Cobbler

We're going dessert again this week with a ridiculously easy cobbler, which is good because I don't like to bake.  I went with mixed berries on this attempt (blackberry, blueberry, and strawberry), but by and large go with peach.  Maybe I'm weird, but this actually tastes better to me cold after sitting in the fridge overnight, but serve it warm with ice cream or whipped cream if that's how you like it.

Ingredients

1 cup self rising flour
1 cup sugar
1 cup milk
1 tsp nutmeg
1 tsp cinnamon
1 stick butter (1/2 cup)
1 16 oz package (about 2 cups) frozen blackberries/mixed berries/peaches/whatever*
2-3 tablespoons additional sugar (optional)

Preheat oven to 350 degrees. Add butter to a 8x9 inch baking pan and place in the oven so the butter can melt. Mix flour, sugar, nutmeg, cinnamon and milk together. Remove pan from the oven and pour the batter over the melted butter. Top with berries and sprinkle with additional sugar. Do not stir. Cook for 45 minutes to an hour, top should be golden brown and the cobbler pulling away from the sides.

* You can use fresh, frozen or canned on this, but fresh or frozen works best. I usually just get a bag of whatever frozen fruit seems most appealing at the grocery store, but if you want to go with fresh peaches, blanch them first in a 1 cup water/1 cup sugar mix for about 10 minutes before adding them.
